Eggless Marble Loaf Cake


Today's recipe is an eggless marble loaf cake or tea cake,with vanilla and chocolate flavor.Already I have share d a version of marble with condensed milk and oil but this version is slightly different and uses yogurt and milk.
This version is a simple one and uses basic ingredients to make.Here I didn't swirl the entire batter, instead layered the vanilla and chocolate batter and swirled the top only.Also I made two,6 inch loaves instead of making a 9 inch loaf.

   Basic Information

   Preparation time 15-20 minutes
   Baking time 35 -40 minutes
   Makes 2 (6"x 3") loaf
  


   Ingredients


  
Ingredient
Quantity
All purpose flour/maida
 1.5 cups
Semi sweetened cocoa powder
1-1.5 tbs
Milk powder
1 tbs
Baking powder
1.5 tsp
Baking soda
1/8 tsp
Granulated white sugar
1 cup
Butter/vennai
1/2 cup
Vanilla extract
1 tsp
Salt
a pinch
Yogurt/thayir
4 tbs
Milk
 1/2 cup

   Method
  • Take all purpose flour,baking powder,baking soda,milk powder and salt and mix it well.Sieve it for couple of times.Grease the baking pan with baking spray or oil and dust some flour.Keep it aside and preheat the oven in 350 F.
  • Now in a bowl take the butter,sugar and whisk in a hand blender or whisker for 30-60 seconds or until creamy.Now to this add yogurt,milk and whisk it well until creamy.Add in the vanilla extract and mix it well.

  • To this add in the sieved flour mixture in batches and gently combine it well.If needed add in the milk and mix it well. In a separate bowl,take the cocoa powder and mix it with a tbs of warm water.To this add -5 tbs of prepared batter.
  • Mix the batter well with no lumps.Now both the vanilla and chocolate batter is ready.Pour a layer of vanilla the batter into greased pan.Then  scoop some chocolate batter on to the vanilla batter and spread it.
  • Again top it with some vanilla batter and chocolate batter.Now with the help of  knife or tooth pick swirl the top of the batter. to get a marble effect.Keep this in a preheated oven,bake it for 35- 40 minutes(mine took 38 minutes) or until a tooth pick comes out clean.Let it rest it for couple of minutes and invert the cake to a wire rack and allow it to cool completely.
  • Slice and serve it.



  • The sweetness was just perfect with the given measurement.If you want the cake to be on the sweeter side add up to 1.25 cups
  • Slice the cake once its completely cool down.
  • As the batter raises,fill pan 3/4th with the cake batter.

Eggless Carrot Cake



Starting the 3rd week of December,Bake-A-Thon with an exotic carrot cake.This eggless carrot cake is a soft,moist cake with a cinnamon flavor.The cake itself  tastes so delicious,to make it even more luscious,it can be glazed with cream cheese or any frosting.Finely chopped nuts and raisin would add a nice crunch to the cake.
Coming to the recipe here I have used both butter and oil.I skipped the raisins as my kids like smooth texture of the cake.So used finely chopped almond and pecans.

   Baking time 35-40 minutes
   Makes 4 mini bundt cakes or one 7 inch round
  


   Ingredients

All purpose flour/maida
 1 cup,minus 2 tbs
Corn starch
2 tbs
Cinnamon powder
1/2 tsp
Baking powder
1 tsp
Salt
a pinch
Finely chopped almonds or
 walnuts
1/4 cup
Granulated white sugar
3/4- 1 cup
Olive oil or any neutral oil
1/4 cup
Butter/vennai
1/4 cup
Milk
1 cup
Vinegar
1.5 tbs
Vanilla Extract
2 tsp

   Method
  • Take all purpose flour,baking powder,salt,corn starch,cinnamon powder and salt and mix it well.Sieve it for couple of times.Grease the baking pan with baking spray or oil and dust some flour.Keep it aside and preheat the oven in 350 F.Add the vinegar to the milk and keep it aside till it curdles.
  • Now in a bowl take the,olive oil,butter and sugar,whisk in a hand blender or whisker for 30 seconds.Now to this,add the buttermilk and whisk it well.
  • To this add in the grated carrot,chopped nuts and vanilla extract,mix it well.To this add the sifted flour mixture in batches and gently combine it well.
  • Pour the batter into greased pan and keep this in a preheated oven.Bake it for 35-4 minutes(mine took 40 minutes) or until a tooth pick comes out clean.Let it rest it for couple of minutes and invert the cake to a wire rack and allow it to cool completely.
  • Slice and serve it.


  • The sweetness was just perfect with the given measurement.If you want the cake to be on the sweeter side add up to 1.25 cups
  • Slice the cake once its completely cool down.
  • As the batter raises,fill pan 3/4th with the cake batter.

Eggless Vanilla Tea Cake



Vanilla flavored tea cakes or pound cakes are my kids favorite and used to make it often.But these days due to diet conscious and gluten intolerance,baking takes back seat.For the year 2018,this cake was the first bake happened in my kitchen in last week of November.
Coming back to the recipe,it's a recipe noted down from a good friend of mine.This is a butter less cake,uses olive oil and yogurt with some basic ingredients.This cake is mildly sweet and perfect to serve with a cup of tea.

Eggless Custard Powder Cake




Its December already and  time to celebrate holiday season with baked goodies. We group of bloggers participate in Bake- A- Thon and some of our blogger buddies are going to share baked goodies on Monday,Wednesday and Friday for the entire month of December.

Today I start up the Bake-A-Thon with a simple eggless custard powder cake.The cake was in my to do list so long and finally tried it.The cake came out so  good and delicious with a perfect texture.I halved the original measurement and made two  inch bundt cakes as my lil one wanted cute cake.

Custard powder(vanilla flavored)
1/3 cup 
Baking powder
1 tsp
Granulated white sugar
1/2 cup
Unsalted Butter/vennai
75 gms /appr. 6 tbs
Vanilla extract
1 tsp(optional)
Salt
a pinc
Milk
1/2 cup

   Method
  • Take all purpose flour,baking powder,custard powder and salt and mix it well.Sieve it for couple of times.Grease the baking pan with baking spray or oil and dust some flour.Keep it aside and preheat the oven in 350 F.
  • Now in a bowl take the butter and sugar,whisk in a hand blender or whisker until it becomes creamy and smooth.Now to this mixture add in the 1/2 cup of milk.Add add 1/2 of the flour and mix it well.
  • Then add the remaining portion of the flour and mix it well.Pour the batter into greased pan. Keep it in the preheated oven.Bake it for 30-35 minutes(mine took 34 minutes) or until a tooth pick comes out clean.Let it rest it for couple of minutes and invert the cake to a wire rack and allow it to cool completely.
  • Slice and serve it.





  • The sweetness was just perfect with the given measurement.
  • Slice the cake once its completely cool down.
  • Here I sprinkled the powdered sugar and did not use any vanilla extract as I used the vanilla custard powder.

Eggless Honey Cake/Indian Bakery Style Honey Cake



Honey cake is a popular cake available in most of the bakeries in South India.This cake is my childhood favorite and mom used to get in from the local bakery.The jam coated on the top and the desiccated coconut makes the cake even more tastier.In this cake no honey is used but a simple syrup is used to moisten the cake hence the name honey cake.
Coming to the recipe,for the base I made a simple eggless vanilla cake with few variations.Also used some freshly squeezed orange juice as the cake available in shops are orange in color.Off to the recipe......

   Ingredients

All purpose flour/maida
1 3/4  cups
Corn starch
1/4 cup or 4 tbs
Neutral Oil or olive oil
6 tbs
Brown or white sugar
2 tbs(optional)
Sweetened condensed milk
1 cup
Baking powder
1 tsp
Baking soda
1/8 tsp
Salt
1/8 tsp
Orange juice
3/4- 1 cup
Vanilla
1 tsp

    For the sugar syrup

Ingredient

Sugar
1/2 cup
Water
1/2 cup 
Food color(orange or yellow)
few drops
  
  For the topping

Ingredient

Mixed fruit jam
4-5 tbs
Desiccated coconut
2-3 tbs
Whipped cream(optional)
as needed
(for garnishing)

 Method 
  • Take all purpose flour,baking soda,powder and salt and mix it well.Sieve it for couple of times.Grease the baking pan with baking spray or oil and dust some flour.Keep it aside and preheat the oven in 350 F.
  • Now in a bowl take the oil,sweetened condensed milk and vanilla,whisk in an electric hand blender or whisker until it becomes creamy and smooth.Now to this mixture add in the 1/2 of the sieved flour.
  • Add half of the orange juice and mix it well,Now add in the rest of the flour and orange juice alternately and mix it well.
  • Pour the batter into greased pan.  Keep it in the preheated oven.Bake it for 30-35 minutes(mine took 29 minutes) or until a tooth pick comes out clean.Let it rest it for couple of minutes and invert the cake to a wire rack and allow it to cool completely.
  • Now mix the sugar and water in a pan and let it cook for 2-3 minutes or until the sugar dissolves.Add in the food color and put off the flame.Now trim the edges and top crust of the cake.Once the sugar syrup cool down a bit,gently sprinkle in on top of the cake.Also on the sides and the bottom of the cake to get soak.
  • Take the jam in a bowl and mix it well.Now gently apply the jam on top the cake and sprinkle the desiccated coconut on top f the jam. Slice the cake carefully and top each slice with some whipped cream if needed.
  • Serve it.






  • The sweetness was just perfect with 1 cup of condensed milk,as again the cake is drenched with sugar syrup.
  • The amount of sugar syrup used is just perfect to drench the cake.If you want the syrup to ooze out from the cake,use around a cup of sugar and water.
  • Instead of orange juice,milk can be used to mix the batter for the cake.
  • Slice the cake once its completely cool down.
  • Here I sprinkled the desiccated coconut only on the top but in some of the shops,even the sides are also coated.If you want the sides to be coated then,keep some extra syrup and dip the sides in sugar syrup and roll it in coconut.
