Masala Kuzhambhu

This is a spicy,tangy and flavorful kuzhambhu which is my grand mother signature recipe.She used to make this one with the fresh field beans(mochai) and drumstick,used the stone  grinder(ammi) to grind the coconut.Since I don't get the fresh field beans here,made it with chick peas  and goes very well with rice as well as idly,dosa.Now on to the recipe....

Ingredients

Tomato2nos.(medium size)
Garlic 3 pods
Drumstick 1no.
Red Chilly powder11/4tsp
Coriander powder21/2tsp
Turmeric powder1/8tsp
Tamarind paste 3/4tsp diluted in 1/4 cup of water
Saltto taste
Fennel seeds1/2tsp
Cloves/lavangam3nos.
Cinnamon 1 inch piece
Star anise 1no.
Curry leaves1sprig
Coriander leavesto garnish
Oil1tbs

To grind
IngredientQuantity
Coconut(grated)4tbs
Fennel seeds1/2tsp
Poppy seeds(kasakasa)1/2tsp
Garlic1clove
Ginger a small piece


Method

                                   Chop the onion,garlic and tomatoes to fine pieces,cut the drumstick to 2 inch pieces.Cook the chick peas in the pressure cooker with a pinch of salt.Grind the ingredients given to fine paste and keep aside.
Heat the pan with the oil,crackle the fennel seeds,cloves and cinnamon,add the onion,garlic,curry leaves.Saute till the onion becomes transparent.Once the onion is done add the tomato and cook until mushy.
Now add the drumstick pieces and saute it,then add the powders and fry it for a while and add 1/2 cup of water.Let it cook till the drumstick gets cooked and tender.
Add the tamarind and let it cook till the raw smell goes off.Add the ground paste and 1/2 cup of water,cook it for another 5-7 mins.Now add the cooked chick peas and allow it to cook for one boil.Finally add the coriander leaves and turn off the stove.
Masala Kuzhambhu is ready.Serve it with rice or idly,dosa.

  • The consistency can be adjusted according to the preference,I make it thick for rice whereas for  dosa  bit watery.
  • If the tomatoes are sour enough then no need of tamarind paste.
  • Other veggies such as brinjal,radish,potato can also be used.
  • Instead of grinding the ginger and garlic with the coconut,a tsp of ginger&garlic paste can also be used.

Paneer Tikka Bread Pizza


Today is the final day of blogging marathon#12 and the recipe is Paneer tikka bread pizza.Here goes the recipe for the yummy and flavorful bread pizza.......

Ingredients

Tomato(deseeded)1no.(medium size)
Olives(sliced)2tsp
Green bell pepper(chopped)1/2cup
Black pepper powder1/2tsp
Bread 8 slices
Pizza sauce1/2cup
Cheese(grated)1/2cup
Saltto taste
Italian seasoning(optional)as needed

To make Paneer tikka
IngredientQuantity
Paneer(small cubes)1/2 cup
Thick curd2tbs
Red chilly powder1/2tsp
Garam masala powdera pinch
Salt1/4tsp
Oil 1tsp

Method

                                Mix all the ingredients together given in the table to make paneer tikka and soak it for 15-20 minutes.Meanwhile mix all the veggies together with salt and black pepper powder,keep aside.
Heat a pan and add the panner mixture and roast it till it becomes dry and pre-heat the oven to 350 degree F.
Now line a baking tray with aluminum foil and toast the bread slice in a toaster or a griddle slightly it turns golden.
Keep the toasted bread on the baking tray,spread the pizza sauce evenly to one side of the bread then add the veggie mixture and paneer tikka,sprinkle some Italian seasoning.
Add the grated cheese to it and bake it in the pre-heated oven for 10 -15 minutes or till the cheese gets melted.
Bread Pizza is ready.Serve it hot.

Paneer Pakora

Today is the day 6 of  Blogging Marathon#12 and the recipe is Paneer Pakora which is a simple and easy to make snack.As  I made it in a hurry I couldn't take the stepwise pictures.
Paneer pakora is a tasty appetizer or tea time snack in which  sliced paneer is coated with a batter,made out of gram flour and other spices,fried in the oil.These pakoras are crispy outside with a spicy tint and soft inside,tastes heavenly eaten along with green chutney and sweet and sour chutney.Now on to the recipe...

Ingredients

IngredientQuantity
Paneer slices10nos.
Gram flour/kadalamaavu/besan1/2cup
Rice flour1/4cup
All purpose flour/maida1tsp
Turmeric powder1/8tsp
Red chilly powder1/2tsp
Cooking sodaa pinch
Saltto taste
Oilfor frying



Method

  • Mix all the flours,powders along with salt and make a thick batter with water.
  • Keep a pan with oil in a medium heat.
  • Once the oil is ready,dip the paneer slice in the prepared batter and fry it in the oil till golden.
  • Drain it on a a paper towel.
  • Sprinkle some chaat masala powder and serve it hot with mint chutney or sauce of your choice.



Enjoy.............

  • The paneer slices should not be too thick or too thin,a slit can be made in the paneer and the green chutney can be stuffed in the slit.

Shahi Rabri


Today's recipe is going to be very simple,exotic and delicious sweet which can be made in no time in the microwave oven.It's Shahi rabri for the 5th day of blogging marathon#12.

It is a special post for me.Yes...this is my 100th post,I am so happy and excited.I am so much thankful to my readers and blogger friends for their support and encouragement.

Shahi rabri is a rich creamy and flavorful dessert which is easy to make,perfect for parties.I got this recipe from Tarladalal cook book and the recipe follows.

Ingredients

IngredientQuantity
Milk1cup
Evaporated milk1cup
Paneer/cottage cheese(grated)11/4cup
Condensed milk1/2cup
Sugar 3tbs
Saffron4-strands
Cardamom Powder1/4tsp
Rose essence(optional)few drops
Ghee1tsp

For Garnishing
IngredientQuantity
Almonds(chopped)1tbs
Pistachios(chopped)1tbs



Method

                        Soak the saffron in a tsp of warm milk.Put everything in a microwave safe large bowl except saffron and cook it in microwave oven for 6-7 minutes.In between stir it couple of times.Finally add the saffron to it.
Let it cool down completely,garnish it with pistachios and almonds.Refrigerate for 2 hours and serve it chilled.

Enjoy..................


  • Use a large microwave safe bowl and fill 1/4 th,otherwise it may spill while cooking.
  • Here I used 2% of milk which can be substituted with whole milk.
  • Initially the sweet will be slightly thin after refrigeration it becomes thick.

Paneer Butter Masala

Today's recipe is another simple and easy to make,creamy recipe with paneer which is one of my family's favorite paneer butter masala.Paneer butter masala is a delicious rich and creamy curry which goes very well with naan,roti and jeera rice.Since my kiddo loves to have it with naan,I paired up with naan for Yesterday's dinner.Today is the 4th day of blogging marathon under the theme 7 days of paneer dishes.Here goes the recipe ...

Ingredients

Paneer(cubed)200gms
Onion(finely chopped)1no.(medium size)
Tomato(pureed)3nos.(medium size)
Ginger&garlic paste2tsp
Red chilly powder3/4tsp
Coriander powder11/4tsp
Garam masala powder1/4tsp
Turmeric powder1/8tsp
Cumin seeds/jeeragam1/2tsp
Coriander leaves(chopped) as needed
Kasoori methi leaves1/2tsp
Tomato sauce/ketchup11/2tbs
Milk11/2cup
Fresh cream(optional)2tbs
Saltto taste
Oil1tbs
Butter2tbs


Method

Heat a pan with 1 tsp of oil in a medium flame and fry the paneer to golden,soak the fried paneer in warm water to get soft.
In the same pan melt the butter and add the remaining oil,crackle the cumin seeds,saute the finely chopped onion till golden.Then add the ginger&garlic paste,fry it for 2 minutes till the raw smell goes off.
Then add the tomato puree and cook it.Now add the chilly powder,coriander powder,salt and garam masala powder,fry it for a minute(care should be taken not to burn).
Add a cup of milk slowly and let it boil till the gravy gets thicken,add the kasoori methi and tomato sauce,cook it for boil.
Finally add the paneer and simmer it,cook it for 2 minutes.Turn off the stove,now add the cream(didn't add) and garnish it with coriander leaves.
Serve it with naan or rotis.


Enjoy.............

  • Adding tomato sauce gives a nice and mild sweetness to the curry.
  • Frying the paneer is optional or the cubed paneer can be soaked in the hot water to get it soften.
  • Store bought tomato puree can also be used for this recipe.I sauteed the tomatoes in a tsp of oil and grind it to make the puree.
  • If the curry is thick adjust the consistency with milk.

Paneer and Mixed Vegetable Frankie

During our last India trip we got a chance to had this mixed veggie and paneer frankie in a chaat house in Chennai.It was so delicious and my kiddo liked it a lot.After couple of weeks I saw the same recipe in a cookery show in T.V and made it with some alterations.The original recipe is a deep fried version instead I shallow fried the the stuffing.It came out perfect and it is ideal for evening snack or brunch.Now to the recipe.....

Ingredients

Green peas(cooked&mashed)1/3cup
Carrot(grated)1/4cup
Onion1no.(medium size)
Green chilly(chopped)2nos.
Ginger&garlic paste1/2tsp
Red chilly powder1/4tsp
Garam masala powder1/8tsp
Turmeric powder1/8tsp
Dry mango(amchur)powder1/4tsp
Corianderleaves(chopped) as needed
Cumin seeds1/2tsp
Corn flour1tbs
Saltto taste
Oil1tbs

For the outer layer
IngredientQuantity
All purpose flour(maida)11/2 cups
Salt1/2tsp
Oil1tbs
Waterto knead

To Serve

IngredientQuantity
Onion(finely chopped)1no.(medium size)
Green chutney2tbs
Chaat masala powderto taste
Amchur powderto taste



Method

                       Mix the maida,salt and oil,make a soft dough and rest it for 30 minutes.Make rotis out of it and this is the outer wrap,keep it aside.

Keep a pan with 1tbs of oil and once it becomes hot crackle the cumin seeds,add the green chillies and ginger&garlic paste,fry it for a minute.Then add the beans,grated carrot and mashed green peas,saute along with the salt.Cover it and cook it for 2 minutes till the veggies get tender.
Add in the mashed potatoes,turmeric powder,chilly powder,garam masala powder and amchur powder,mix it.Add the grated paneer and mix it well,cook it for 2-3 minutes stirring in between.Finally add the coriander leaves and let the mixture to cool completely.
Now sprinkle the corn flour and mix it well,divide into 16 equal portions and make a 2 inch oblong shape.Shallow fry with oil till golden color.Drain it on a paper towel.
Now mix the chopped onion,amchur powder and chaat masala,keep it aside.
Take one roti on a plate or on a flat working surface and apply mint chutney,place two veggie and paneer roll.Sprinkle the onion mixture and roll it tightly and wrap in a tissue paper or aluminum foil.
Serve it immediately.


  • In the original recipe both the outer layer/wrap and the stuffing is deep fried.
  • Adding the mint chutney is purely optional instead ketchup or sweet and hot chutney can be used.
  • For the outer layer chappathis or store bought tortillas can also be used.
