Boondhi Ladoo

Boondhi ladoo is a delicious sweet which is made for special occasions such as diwali and other festivals.My mom makes excellent and perfect ladoos and here is the recipe...





Ingredients


IngredientQuantity
Kadalamaavu(besan) 1cup
Rice flour2tsp
Sugar11/4cups
Cardamom powder1/2tsp
Ghee1tsp
Cashews(broken)4tbs
Raisins(optional)2tbs
Cooking soda a pinch
Salta pinch
Food colors(green,red,orange)a pinch
Oilfor frying


Method

                       Sieve the besan and mix it with salt,cooking soda and make a batter with water.The batter should not be too thin or too thick,should be in a dropping consistency.Divide the batter to three equal portions and mix each color in each divided portion.(its optional).


Heat a pan with oil in a medium heat and hold the boondi ladle and pour some batter and tap the ladle slightly.The batter will start dropping into the oil and fry it for a while,no need to get crispy.Drain it in a paper towel.Continue for the rest of the batter.


Mix the sugar with one cup of water and allow it to boil till it becomes thick should be half string consistency,and little sticky.Turn off the stove and let it becomes warm.Now add in the fried boondhi,fried cashews and cardamom powder,mix it well.Let it soak for 10-15 minutes.


Once all the syrup is absorbed by the boondhi,take a fistful of boondhi and press it gently,shape it to a round ball and arrange it in on a plate.


Ladoo is ready to enjoy.



  • Each time wipe the back of the boondhi ladle with a tissue paper or towel to get a perfect shape.
  • Cloves,melon seeds can be added for extra flavor and rich taste.
  • If the suar syrup consistency reached one string or more,add little hot water to adjust the consistency.

Omapodi/Sev

Omapodi is a simple snack,with the flavor of omam(carom seeds) which is one of my favorite.I like this omapodi which is available in a shop in my home town which is tasty and flavorful.Here is the recipe...



Ingredients


IngredientQuantity
Kadalamaavu(besan) 11/2cups
Rice flour1/2cup
Red chilly powder1/2tsp
Omam(carom seeds/ajwain)2tsp
Butter/ghee2tsp
Turmeric powder1/2tsp
Cooking soda a pinch
Oilfor frying
Saltto taste

Method


              Mix in all the ingredients except oil  and make it to a smooth,soft dough with water.Heat a pan with oil in a medium flame,take the murukku maker with the small hole disc and fill it with the prepared dough.


Squeeze it in the hot oil in a circular  manner for a single layer and fry it till the sizzling sound settles down.
Drain it in a paper towel and crumble it to small pieces.Store it in an air tight container.

  • This omapodi can be made without rice flour,it will be soft and crunchy.
  • Omam can be grind and added to the flou if the size of the hole in the disc is small.

Masala Dosa

Masala dosa is a breakfast or dinner item which is very popular in South India.A crispy dosa filled with potato curry served along with chutney and sambhar.I made this dosa for dinner yesterday and had it with sambhar.Here goes the yummy and tasty recipe..


Ingredients

IngredientQuantity
Idly or dosa batter as needed
Potato 2nos.
Green chilly(chopped)5nos.
Onion(chopped)2nos.
Mustard seeds1tsp
Urad dhal2tsp
Channa dhal1tbs
Turmeric powder1/2tsp
Cashews(broken)1tbs
Ginger(chopped)1tsp
Asafoetidaa pinch
Curry leaves2sprigs
Coriander leaves(chopped)to garnish
Oilas needed
Saltto taste



Method

                    Boil the potatoes, mash it well and keep aside.Heat a pan with oil and season it with mustard seeds,urad dhal,channa dhal and cashews(I didn't use).Add in onion,green chillies,asafoetida ,curry leaves and saute it till it becomes soft.


Now add the mashed potatoes ,turmeric powder and salt.Mix it well and cook it for a minute.Turn off the stove.The filling is ready.


To make dosa,keep a dosa pan on the stove, once it becomes hot enough pour a ladle full of batter and spread it as thin as possible.


Drizzle a spoon of oil and allow it to cook till it becomes crisp(no need to flip).Keep the potato masala in the center of the dosa and fold it.


Enjoy it straight from the pan with the chutney and sambhar.




  • Using  flat base ladle helps easy to spread the dosa thin.
  • Cooking the dosa in a medium flame gives nice brown color to the dosa.
  • Place the masala in the dosa, after the dosa is completely cooked .
  • Finely chopped raw onions can be sprinkled on the masala.

Corn Flakes Mixture/Chivda

Corn flakes chivda is a crunchy, munching snack which can be eaten any time of the day.This is my son's one of the favorite snack, I make it quiet often and store it.This can be made in no time.Here follows the quick snack.....





Ingredients

IngredientQuantity
Corn Poha 1cup
Peanuts 1/2cup
Roasted Channa dhal1/2cup
Cashews1/2cup
Raisins2tbs
Fennel seeds(sombhu)1tsp
Chilly powder1/2tsp
Turmeric powder1/2tsp
Asafoetidaa pinch
Curry leaves2sprigs
Sugar1tsp
Oilfor frying
Saltto taste

Method

                     Heat the oil in kadai and fry the corn poha and drain it in a paper towel.Then fry the peanuts, cashews, in a separate an with a tsp of oil and keep aside.


Heat a wide mouth pan with a tbs of oil,crackle the fennel seeds.Add in curry leaves,asafoetida,roasted channa dhal,salt,raisins(didn't use)and switch off the stove.Now add in the chilly and turmeric powder.Finally add the fried corn flakes,peanuts,cashews and sprinkle sugar,mix it well.


Allow it to cool and store it in an air tight container.


Enjoy.........


  • Plain roasted breakfast corn flakes can be used.
  • Potato chips can be crumbled and added.
  • Adding sugar is purely optional and used the roasted store bought cashews.
  • Chilly powder should to be added in the end after switch of the stove,otherwise it may turn black.

Mushroom Pulao

This is a mild rice preparation and easy to make one pot meals which is ideal for lunch box.



Ingredients

IngredientQuantity
Basmathi rice 1cup
Mushroom1packet
Onion(chopped)2nos(medium size)
Garlic(thinly sliced)6-7 cloves
Green chilly5nos.
Mint10-15leaves
Coconut milk1/2cup
Chilly powder1/2tsp
Turmeric powder1/2tsp
Cashews(broken)2tsp
Coriander leaves(chopped)to garnish
Oil2tbs
Saltto taste

To season
IngredientQuantity
Cloves 4-5nos.
Cinnamon1 inch piece
Bay leaf1no.(medium size)
Fennel seeds1/2tsp

Method
                 Clean,slice the mushrooms and keep it aside.Heat a pressure pan or cooker with oil and season it with ingredients given for season.Saute the onions,cashews,thinly sliced garlic and green chillies till it becomes soft.Add in mint leaves and mushroom and give it a stir.


Then add the chilly powder,garam masala powder and salt and saute it for a minute.Now add the rice and mix it till everything gets mixed well.


Finally add the coconut milk and water and close the cooker with the lid.Cook it for a whistle in the medium flame and keep it in a low flame for 5 minutes.Garnish it with coriander leaves.


Enjoy it with spicy kurma or raitha and chips.




  • Here I used the coconut milk powder which can be substituted with fresh coconut milk.
  • The water used is 11/4 cups (includes coconut milk) for one cup of rice and soaked the rice 20 for minutes.

Fruit Chaat

This fruit chaat is a simple dessert with a blend of  fruits,tossed with chaat masala and soaked in orange juice.One of my friend made this for a potluck and that was the first time I tasted.It tastes really delicious and has a sweet, tangy taste with the nice flavor of chaat masala. My family likes to eat fruits and made this today. Here is the recipe.





Ingredients


IngredientQuantity
Banana 1no.
Apple2nos.
Kiwi 2nos.
Strawberry7nos.
Grapes 10-15nos.
Orange juice 1/2cup
Chaat masala1/2tsp
Sugar2tbs
Pepper powdera pinch


Method

                         Cut all the fruits into small chunks and toss it well with chat masala,sugar and a pinch of pepper powder in a bowl.


Finally add in the orange juice(I used fresh juice) and mix it well.Refrigerate for 30 minutes.


Ready to serve.



Enjoy.........


  • Instead fresh orange juice canned juice can be used.
  • Other fruits such as pears,mangoes,pineapple can be added.
  • Mint leaves can be added for extra flavor.
