Onion Mint Sandwich


Sandwiches are my favorite and love to have it for a light meal.Today's recipe is one such a simple and easy to make one and I adapted the recipe from Priya's Versatile Recipes in which she tried from Sharmis Passion.I slightly tweaked the recipe according my taste buds.
This sandwich doesn't need any fancy ingredients and it can be made in a jiffy and tastes awesome.I grilled the sandwich but if you want you can toast it directly in a pan or in a sandwich maker.Here goes the recipe.....................


Ingredients

Onion(thinly sliced)2
Red chilly powder/milgai podi1tsp
Coriander powder/dhaniya podia pinch
Turmeric powder/manjal podia pinch
Garam masala powder (optional)a pinch
Cumin seeds/jeeragam1/4tsp
Mint leaves/pudina1/4cup
Green chilly2
Saltto taste
Lemon juice1/2tsp
Butter/vennai or ghee1-2tbs
Oil2tsp



Method

  • First heat a pan with tsp of oil and saute the mint leaves,green chilly for couple of minutes and transfer to a blender jar.To this add the grated coconut,salt and lemon juice.Grind it to a smooth paste and keep it aside.

  • Now to the same pan heat the oil and throw in the cumin seeds,saute the onions with a pinch of salt till transparent.

  • Add the spice powders and salt,mix it well.Cook it for a minute.

  • Now apply the mint chutney on one side of the bread slice and keep the onion filling.

  • Press it gently and toast it with butter in a pan/sandwich maker or grill it .

  • Simple yet delicious and filling Sandwich is ready.

  • The addition of garam masala powder is purely optional,instead of red chilly powder,sambar powder can be used.
  • You can use both white or wheat bread to make this sandwich.
  • Along with mint,fresh coriander leaves also can be used to make the chutney.

Potato Masala Sandwich/Aloo Sandwich/Aloo Toast


My kiddo loves sandwiches a lot especially the potato stuffed one his all time favorite.This way I sneak some veggies and feed him,today's recipe is with the mashed potato and some veggies.
Depending on the availability of the ingredient I make it for his evening snack or breakfast.On a lazy weekend this sandwich is for our brunch along with some cardamom tea or juice.
You can make n number of variations in the stuffing and make sandwich.Lets move on to the recipe.............................



Basic Information

Preparation Time 5 minutes
Cooking Time 15 minutes
Serves 4

Ingredients

To make the Stuffing

Potato/Urulai kilangu2-3(medium size)
Onion(finely chopped)1(medium size)
Green chilly/pachamilgai2(finely chopped)
Redchilly powder/milagai podi1/2 tsp
Garam masala powder1/4 tsp
Aaamchur powder1/2 tsp
Oil1 tbs
Coriander leaves/kothamallifor garnishing
Cumin seeds/jeeragam1/2 tsp

For the Sandwich

Bread Slice8
Mint Chutneyas needed
Onion(finely chopped)2-3 tbs
Carrot(grated)2-3 tbs
Butter/vennai2-3 tbs



Method

Cook the potato in a pressure cooker for 2 whistles,peel the skin and mash it.Keep it aside.
Heat a pan wit oil and crackle the cumin seeds,add the chopped onion and saute it till transparent.Now add the mashed potatoes,spice powders,salt and chopped coriander.Mix it well and cook it for a minute.Put off the flame.


Take a bread slice and apply the mint chutney evenly and keep a generous amount of stuffing.Sprinkle the chopped onion and grated carrot and keep it aside.Take another slice of bread and apply butter as needed.Close it with the bread slice which has stuffing.


Apply some butter on the sandwich maker and top of the bread slice,toast it or toast it in a griddle.Cut it into two triangles.


Aloo/Potato Sandwich is ready.Serve it with ketchup.

  • Grated paneer/cottage cheese or a cheese slice can be topped on the stuffing for extra rich taste.
  • Mixed veggies can also be added along with mashed potato.
  • For the mint chutney I used 2 tbs of grated coconut along with the mint to make it slightly thick and easy for spreading.

Egg Masala Sandwich / Masala Egg Sandwich / Egg Sandwich


Coming to  the second day of Blogging Marathon#64 themed under kids brunch recipes,is a quite inviting sandwich with eggs.Mostly on week ends, my kiddos get up late and ended up in eating brunch Since week end mornings are lazy I tried to make some recipe which is slightly filling as well as easy to make in no time.
One such quick fix  is sandwiches, as we like it a lot I tired to make it with different stuffing.This recipe was suggested by my son when I had some left over egg stuffing made for egg puff,for a potluck.He liked it a lot,since then I make it often for him.As he likes mint chutney for sandwich I used,its optional.But the chutney gives a nice flavor and taste to the sandwich.

   Basic Information

  Ingredients

 For the stuffing

Tomato(chopped)
1 medium size
Ginger&garlic paste
1 tsp
Red chilly powder/milagai podi
1 tsp
Turmeric powder/manjal podi1/8 tsp
Garam masala powder
1/8 tsp
Salt
3/4 tsp
Coriander leaves(chopped)
1 tbs
Fennel seeds/sombu
1/8  tsp
Cumin seeds/jeeragam
1/8 tsp
Oil2 tsp

 For the sandwich


Ingredient
Quantity
White or wheat bread
4 slices
Butter/vennai
1 tbs
Mint Chutney(optional)
2 tbs
   

  Method

  • Boil the eggs and remove the shell,halved and keep it aside.
  • ln a pan heat the oil and crackle the cumin and fennel seeds.Saute the sliced onion with a pinch of salt till traslucent.Add in the ginger&garlic paste and fry it for a minute.Then goes in the chopped tomato and cook it  for a minute or two.
  • Add in all the spice powders and salt,give it a mix.Now add the halved egg and gently mix it well,so that everything blends well.Add in the chopped coriander leaves and put off the flame.Let it cool down to room temperature.
  • Now take the bread slice and apply mint chutney on one side,keep in on a sandwich maker.On top of the chutney keep 2 pieces of halved egg and the masala .Keep it covered with another slice.Brush the top of the bread with butter and cover it and toast it till it turns nice and golden.

  • Serve it warm with ketchup and mint chutney.





    • Instead of half eggs,it  can be sliced and added to the masala.
    • Use butter to give a nice taste.

    Paneer Grilled Sandwich / Grilled Paneer Sandwich


    Ending the protein rich dishes in Blogging Marathon series with a grilled sandwich with paneer stuffing.I can't believe that we have completed a month.

    I wanted to end the series with a sweet note,but some of my personal things kept me busy.In the last minute I changed it to a simple sandwich with paneer.

    As my kids love sandwiches for their after school snack,I experiment so many sandwich recipes.One such is the grilled panner sandwich with cheese and veggies.This sandwich came out extremely addictive and delicious.



                                                      
                                                                
                                                Paneer Grilled Sandwich/Grilled Paneer Sandwich


                                                                      
       Basic Information

       Preparation time 10 minutes
       Cooking time 10 minutes
       Serves 2


      Ingredients




    Ingredient

    Bread slices(white or wheat)

    Mozzarella cheese
    1/4 cup (grated)
    Onion(roundly sliced)
    as needed
    Tomato(sliced)
    as needed
    Cucumber(sliced)
    Mint Chutney/pudina chutney2 tbs / sandwich
    Chaat Masalaas needed
    Butter/vennai1 -2 tbs

     For the panner stuffing


    Ingredient
    Quantity
    Paneer(grated)
    200 gms
    Green chilly
    2(finely chopped)
    Ginger/inji
    1 tsp(grated)
    Red chilly powder
    1/2 tsp
    Garam masala powder
    1/4 tsp
    Turmeric powder/manjal podi1/8 tsp
    Dried fenugreek leaves/Kasoori methi1 tsp
    Cumin seeds/jeergam1/2 tsp
    Saltto taste
    Oil2 tsp
        
       Method 
    • Start by heating the pan with oil and crackle the cumin seeds,to this add the green chilly and grated ginger.Reduce the flame and add in the spice powders and salt,give it a mix.
    • Now add in the grated paneer and mix it well,so that everything blends well.Put off the flame adn add in the chopped coriander leaves and kasoori methi.Mix it well.
    • Now spread a tsp of butter on a slice and apply some mint chutney.To this add generous amount of paneer stuffing.On another bread slice apply some mint chutney and keep on to top of the it.Keep some onion,tomato and cumber slices.Sprinkle some chaat masala powder.
    •  Sprinkle some grated cheese on top of the veggies.Now cover it with a chutney smeared bread.Apply some butter on top of the bread slice and grill it for 2 minutes or according to the instructions.
    • Remove it and cut diagonally.
    • Serve it warm with ketchup.

      Sandwich Dosa / Sandwich Masala Dosa



      Today's recipe for the Cooking Carnival is a dosa with colorful filling resembles veggie sandwich.
      I got the idea of making this sandwich dosa after seeing our BM buddies shared some sandwich recipes without bread.
      So tried this dosa one day for evening snack for my son and he loved it.Immediately included this dosa in my list to share for this theme.
      I mashed the potatoes and used it here also used some grated panner.One can replace the paneer with cheese and make it a cheesey dosa.The addition of mint chutney gives a very nice taste and this dosa tastes good as such.No need of any extra side dish for this one.But I serve it with coconut chuney and some sweet and spicy sauce.Off to the recipe...........




                                                     
                                               
                                                                                    
                                              Sandwich Dosa/Sandwich Masala Dosa


                                                                        
         Basic Information

         Preparation time 25 minutes
         Cooking time 2-3 minutes/dosa
         Makes 3 dosas


        Ingredients

        For the stuffing/filling 

      Ingredient

      Potato
      2 (large size)
      Onion(finely sliced)
      1 (medium size)
      Tomato(thinly sliced)
      2
      Cucumber/vellaikkai(thinly silced)
      1 (small size)
      Paneer(grated)
      1/4 cup
      3 tbs
      Chaat Masala powder
      1-2 tsp
      Red chilly powder/milagai podi
      1/2(optional)
      Coriander leaves
      1 tbs(finely chopped)
      Hot and sweet sauce
      1-2 tbs
         
         To make Dosa


      Ingredient
      Quantity
      3 cups
      Oil
      as needed to cook
      dosa
      Butter
      1 tbs

        
        
       Method
      •  Pressure the potatoes and peel the skin.Mash it roughly and keep it aside.
      • Take the  batter and adjust the consistency with water.Heat a griddle and once it becomes hot ,add a drop of oil and wipe it off with a paper and keep the flame in medium.Pour a ladleful of batter and spread it to a circle(no need to spread it too thin).
      • Let it cook for a minute.Once the dosa gets cooked,smear mint chutney on top of the dosa and drizzle the oil.Let it cook for 30 seconds.
      • Now to half of the dosa,keep the mashed potato and grated panner.Sprinkle some chaat masala powder.Now top it with sliced onion,tomato and cucumber and coriander leaves.Sprinkle some more chaat masala if needed.Drizzle some ketchup or hot and sweet sauce.Loosen the edges of the cooked dosa with a spatula and fold it to half(semi circle).Remove it from the pan.Top it with butter.
      • Serve it with chutney and sauce.





      • While pouring the batter on the griddle,the flame should in medium.Then only it will be easy to spread.
      • While keep the stuffing on top of the dosa reduce the flame.
      • Butter can be used instead of oil.
      • Instead of mint chutney tomato ketchup or garlic chutney can also be used.

      Paneer Sandwich

      This is a simple and healthy sandwich in which a tangy paneer stuffing between the bread slice makes the evening snack or morning breakfast perfect.Yesterday myself and my son was craving for something to eat in the evening,the weather was so cloudy and rainy.Wanted to eat a healthy and filling snack and not feeling to munch any fried item.When I looked at the pantry and refrigerator a pack of bread ,some left over mint chutney and paneer were there and suddenly got an idea of making sandwich as my son loves to eat paneer in any form.

      Ingredients

      Bread12 slices
      Paneer(grated)200gms
      Onion1no.(medium size)
      Green chilly2no.
      Ginger(grated)1/2tsp
      Chilly powder1/2tsp
      Coriander powder1/2tsp
      Garam masala powdera dash
      Turmeric powder(optional)1/4tsp
      Kasoori methi1tsp
      Amchur powder3/4tsp
      Coriander leavesto garnish
      Mint chutney(optional)3tbs or as needed
      Butter(optional)2tbs
      Oil2tsp
      Saltto taste

      Method
                               Heat a frying pan or wok in a medium heat. Add oil,once it gets heated up, put in the finely chopped green chillies,grated ginger and fry for few min. Add the onion and saute till it becomes transparent.Add the grated paneer,powders,salt and stir it for a while till everything gets blend.
      Now add in the amchur powder and kasoori methi and mix it well.Finally add the chopped coriander leaves and turn off the stove.Yummy and tangy stuffing is ready.
      Take a slice of bread,spread the mint chutney and keep a generous amount of stuffing.Cover it with another slice of bread and apply butter on the top.
      Toast in a sandwich maker/toaster or on a griddle.
      Simple and healthy paneer sandwich is ready.


      Enjoy it with ketchup or sweet & hot sauce and a cup of tea.


      • Cooking the paneer in the medium flame is very important otherwise the paneer turns out hard.
      • A tsp of ginger of ginger&garlic paste can be added,instead of grated ginger.
      • Using mint chutney is purely optional,it gives an additional flavor(used the leftover chutney).
      • Toasting it with butter gives an extra taste to the sandwich,again its optional but while toasting in griddle butter is needed.
